The moment I open my eyes first thing every morning, I start thinking about everyone and everything I am thankful for.
Today we celebrated Thanksgiving with Steve, Erica and the girls. Erica and I cooked together all day long, which is one of the things I am so thankful for. It's always a lot of fun to create in the kitchen with my girls. And create we did! We had chosen broccoli for the vegetable instead of green bean casserole, but we really had no idea what we wanted to do with it besides steam it and throw some America cheese on it. So, we got this idea we could make an au gratin. I have never actually made cheese sauce before, but heck, I watch the Food Channel, how hard could it be? So, I made the white sauce, added the grated cheddar cheese and threw in a couple of slices of American, since I was low on cheddar, while Erica cleaned the broccoli and made a bread crumb and Asiago/Parmesan topping. We popped it in the oven with the smoked turkey and, whalah! Fabulous side dish! Of course we had to make the ever popular apple salad, hot rolls and Grandma Adamson's famous Apple Cake for dessert.
Chet and I will be leaving for Green Valley to enjoy the official turkey day with Mom, Bob and a whole passle of new friends. The holidays are a bit different this year, but we have the most wonderful family on the face of the Earth and I couldn't be more thankful. I love you all.

I, too, count my blessings each and every day. We are anxious for the next Turkey Day here in Green Valley. Haven't decided just what all it will entail except we will have lots of good food and family and friends. Who could ask for anything more.
